Salsa Chicken

 Salsa Chicken

4 Chicken Breasts (fresh or frozen)

OR

4 Cups of Diced Chicken (it comes Frozen and Diced in your Freezer Section at the grocery store -- I shop at Costco because everything I like is there and in bulk!)
1 large tin (14oz.) Diced Tomatoes
1 Cup Salsa

Brown the Chicken if you are using a Skillet, or just place the Chicken Pieces in a 9" X 13" Oven-Proof Dish. I use my new Big Electric Wok, which I love because it has really even heat and I can leave the dinner for any amount of time until I remember I was cooking something!

Add the Diced Tomatoes and the Salsa. Stir and Cover.

Simmer for an hour or so (I put this on in the late afternoon and just let it simmer away until dinner time.) If this is going in the Oven, cook it for about an Hour covered with Tin Foil and bake it at 350 Degrees.


Serve over Rice or Pasta. Oh, and if you haven't tried a Rice Cooker, yet, they are fantastic! I love mine, and use it all the time.

If you're trying to keep yourself extra-healthy, try Wheat Pasta -- with a really good sauce like this Salsa One, it'll taste really good....! I mix the Wheat Pasta with the Regular Pasta, and that tastes great.


Add grated Cheddar Cheese and a nice fresh loaf of bread, if you're fond of that!

How easy is that?! And tasty, too!
