Soft Tacos are really easy to make, and your whole family will love them.
1 pound of Lean Ground Beef (you could use Ground Chicken or Turkey, if it's available in your area)
3 - 6 Tablespoons of Taco Seasoning or One or Two Packets. (We like it Spicy...)
Soft Taco Shells (Flour Tortillas -- in the Bread Section at the Grocery Store)
Lettuce (I use the pre-made Salad...)
Cheddar Cheese, Finely Shredded -- use the tiny section of the Grater
Cook the Ground Meat in the Skillet at 350 Degrees until it's all Browned, then Sprinkle the Taco Seasoning on the Meat. Mix well. Turn down the heat, cover and simmer until you are ready to eat. If you'll be a while, add about a cup of water so the meat won't burn. Remove the cover and turn up the heat to remove any remaining water before you serve the meat, so it appears crumbly.
Put one Flour Tortilla on each Plate. Pop them each into the Microwave (one at a time, of course!) for 45 seconds on High.
Put the Salad, Grated Cheese, Diced Tomatoes and Salsa on the Table. This is a 'Serve it Yourself' Meal!
When you take the Flour Tortilla out of the Microwave, quickly flip it over, so the steam doesn't make it 'wet'. Put some meat in the center, then the Cheese, Salsa, Tomatoes and Salad.
Clearly, I like a ton of salad on my Soft Tacos! Fold it from the Bottom, then one Side and then the Other. Voila! You're Done! And I'm sure you'll all love it!
What's a Recipe without a picture of Aidan waiting to eat it?? One day I'll figure out how to change the lighting from the computer, but not today!
